Gluten Free Stuffed Green Peppers

Since learning that I was gluten intolerant, I have been super careful about the foods I eat.  Luckily, I have plenty of recipes that aren’t made with any wheat. One of my favorite recipe to make and that I can still enjoy, is my mom’s stuffed green peppers.

Gluten Free Stuffed Green Peppers This stuffed green pepper recipe is completely gluten free. They can be made ahead of time and in my opinion actually taste better when they are reheated.  Eating gluten free can be very satisfying.

Gluten Free Stuffed Green Peppers

Ingredients
  • 5 green peppers, cut in half and cleaned
  • 1 cup uncooked rice
  • 1 pound organic ground beef
  • 2 cans organic tomato sauce
  • 1 can diced tomatoes
  • 2 garlic cloves, minced
  • 1 small onion, chopped
  • 2 teaspoons basil
  • Olive oil
  • Salt and pepper to taste
  • 2 teaspoons Worcestershire sauce
  • 1 cup organic beef broth
  • 1 cup shredded cheddar cheese (or your favorite shredded cheese)
Instructions
  1. Preheat oven to 350.
  2. In a large pan, cook ground beef. Drain and set aside.
  3. Saute onion in a little olive oil until tender. Add garlic and saute for a minute longer. Add 1 can tomato sauce, diced tomatoes, rice, basil, Worcestershire sauce, beef broth and cooked ground beef. Salt and pepper to taste. Cook at low-medium heat until rice is cooked, about 20 minutes.
  4. Place green peppers in a large baking dish. Stuff each pepper with rice mixture. Top each pepper with tomato sauce. Pour a little water at the bottom of the baking dish.
  5. Bake uncovered for 15 minutes. Cover and continue baking for an additional 30 minutes. Top each pepper with cheddar cheese and continue baking until cheese is melted.
